The French Perigord Truffle is the fruiting body of the fungus Tuber melanosporum that forms a symbiotic relationship with the roots of oak trees.
The edible portion, the black truffle is harvested in the winter. Black truffles are highly prized and sought after by chefs and food lovers all over the world.
Unlike Europe, where the long established truffle markets of Richerenches, Apt, Carpentras, and Alba have provided fresh truffle for connoisseur to just walk up and purchase, the US has no such market.
Virginia Truffles would like to change all that.
